Why does my footage look flat and washed out?

I record my footage in a special format called s-log 3, which is designed to look low-contrast and low-saturation straight out of the camera but allows your editor to pull out more detail and color than would be possible otherwise.

To put your mind at ease, here’s a before and after from a recent project.
